Thyme oil was used by ancient civilizations such as the Egyptians and the Greeks. Thyme's name comes from the Greek word thymos, which means "perfume." The essential oil is a red to orange-brown liquid and has a very warm, somewhat pungent, distinctly aromatic herbaceous odor. The main constituent is carvacrol and thymol.
This aromatic plant is native to Spain and can be found throughout the Mediterranean region, and is considered one of the most important aromatic plants due to its impact on culinary purposes and medicinal properties.
There are numerous varieties of thyme. The best known in Spain is the red thyme Thymus Zygis, one plant that can resist drought and high temperatures, also the occasional freeze. Its main enemy is excess water in the soil.
It is produced in the southeast of Spain and the growing season is from May to October.
